Thanks to these properties, bird cherry flour works as a natural antiseptic, actively fighting the pathogenic environment. The phytoncidal properties of the plant are so great that it is able not only to have a preventive effect, but also to actively fight against already developing inflammatory processes of any nature, even venereal.

Tannins and other useful components that make up the fruit help to improve the functioning of the digestive system, fight its disorders, especially diarrhea. The pronounced antispasmodic effect prevents pain in the gastrointestinal tract.

Bird cherry fruits contain useful bitterness - substances necessary for the healthy functioning of all organs of the digestive system and strengthening the walls of the stomach. However, the content of these elements in cultivated varieties is less than in the fruits of wild bird cherry, since breeders deliberately strive to make them sweeter, as a result, wild fruits are bitter, but their healing effect is higher.

Harm and contraindications to ground bird cherry

Any product, no matter how useful it may be, has its own contraindications. Unfortunately, the ground bird cherry is no exception. In this case, contraindications, like the healing properties, are explained by the peculiarities of the composition.

Eating bird cherry flour can harm people:

  • Immunocompromised... The fruit of the bird cherry tree contains amygdalin, which, when decayed, releases poison - hydrocyanic acid. And although the content of amygdalin in the plant is small, for those whose immunity is weakened (people who have had serious diseases, pregnant and lactating women) or are not formed (children under 3 years old), bird cherry is still contraindicated in any form.
  • Constipated... As we said above, the fruits of bird cherry contain a large amount of tannins, they have astringent and fixing properties, which helps to fight diarrhea, but with constipation, the situation can only worsen.
  • With severe diseases of the digestive system... Ground bird cherry slightly irritates the mucous membranes, and therefore, with an exacerbation of gastrointestinal diseases, it is prohibited.
  • Diabetic... The fruits contain a lot of sugar, which means that diabetics are undesirable to use them.
  • Allergy sufferers... Certain components that make up the fruit of the bird cherry tree can cause allergies against the background of individual intolerance to the components, in which case the use of the product is strictly prohibited.
Bird cherry has an ambiguous effect on reproductive ability. In ancient times, healers prepared special potions based on this plant, which were recommended for women to use in order to avoid unwanted pregnancy. Some doctors still assure that bird cherry can work as a contraceptive, although this effect is not scientifically substantiated. One way or another, if you are planning a child, it is better to refuse the use of bird cherry flour. However, at the same time, we do not recommend using ground fruits as a reliable method of contraception; it is better to use modern proven methods to prevent unwanted pregnancy.

Cooking steps

Step # 1. In order for the bird cherry pie to turn out lush and airy, it is necessary to knead the yeast dough in one of the most popular ways. The recipe for such a test is simple. The main thing is to choose the right yeast. It doesn't matter whether they are dry or fresh, you will not feel much of a difference. True, with fresh yeast, the pie with bird cherry and sour cream will be more aromatic. Do everything sequentially, according to the recipe.

So, in a deep bowl, combine yeast, sugar, warm milk (but not hot!). This will be a dough for the cake. Leave the mixed ingredients alone for 10-15 minutes.

Step # 2. Break an egg into a separate bowl, add melted butter, salt, vanilla sugar. Whisk all this well with a whisk until smooth. Now add this mixture to the dough and stir. Slowly adding flour, knead the yeast dough for the pie. Remember - it should be free of lumps.

Step # 3. When you knead the dough, cover it with a napkin or towel and send it to a warm place. Let it fit until it doubles in volume.

Step # 4. While the dough is coming up, you can proceed to preparing the filling. The proposed recipe will work with any of the bird cherry jam options.

Option one. Well, if you find ground bird cherry somewhere, then you can handle it faster. Just pour the hot milk over the bird cherry powder, add sugar and, stirring, cook the mixture for three minutes. Then leave it on for a while to steam the bird cherry.

Option two. However, if there was no ground bird cherry, or you want to use fresh berries, then we will share with you a simple recipe for bird cherry jam. Rinse the berries thoroughly and dry them (it is necessary that the excess liquid is glass).

As soon as the cherry berries are dry, pass them together with the seeds through a meat grinder two or three times. Never grind the bird cherry in a blender, do it exclusively with a meat grinder! The more times you mince the minced meat, the more tender it will be.

When the bird cherry mince is ready, in the same way as in the first version, fill it with hot milk, add sugar and cook for 3 minutes over medium heat. Remember to stir to prevent the jam from burning. After the indicated time, remove the pan from the heat. The bird cherry jam recipe has come to an end. It remains to let the future filling stand and swell.

Step # 5. Add the egg and curd cheese to the cooled milk-bird cherry mixture. Stir everything with a whisk until smooth, and then proceed to preparing the cake for baking.

Step 6. Take any form with a diameter of 24-25 cm, put the suitable yeast dough into it, forming high sides at the same time. Pour the filling on top of the dough. The recipe requires after this step to put the form for half an hour in a warm place.

Step 7. Now send the bird cherry pie in an oven preheated to 200 degrees and bake it for about 45 minutes. Then take the baking dish out of the oven and set the cake to cool.

Step 8. Then start making sour cream. His recipe will seem simple to you, but believe me - the cream will be very tasty! Mix creamy sour cream with powdered sugar. Make sure that there is no starch in the icing sugar! Then whisk the mixture and refrigerate it to thicken.

Step 9. When the cake has cooled, remove the cream from the refrigerator and generously brush over the baked goods with the sour cream mixture. Do not regret the cream! Then the cake will turn out to be tender and soft. You can decorate it with mint leaves or cherry berries - there are already endless opportunities to show your imagination, although the recipe itself does not need any additions, because the pie looks very appetizing anyway!

Here's the cake and ready! If you did everything consistently, then the baking according to our recipe simply must turn out. • normalize intestinal motility.

Useful properties are possessed not only by the pulp of cherry fruits, but also by their seeds. Bird cherry should not be consumed by people prone to constipation.

Preparing the filling for baking

For the filling you need to use only fresh berries of bird cherry... As a last resort, they can be frozen for this purpose. Dried fruits are also best prepared by yourself, but they should be used for making tea or tinctures.

So, to prepare the filling for pies, pies and buns, we take fresh bird cherry berries and sugar in a 1: 1 ratio.

After that:

  1. Grind the berries with a meat grinder, without worrying about the seeds.
  2. Add sugar to the ground berries.
  3. Mix thoroughly.
  4. Cover with linen or cotton cloth.
  5. We leave for a week.

For seven days, the bird cherry with sugar should be mixed as often as possible. At least twice a day. In the morning and in the evening. After a week, the filling is ready. If you do not plan to use it right away, then you need to transfer it to sterilized glass jars and roll it up.

This filling has the desired consistency for baking. It does not flow when cutting pies and rolls, and does not spread when baked in the oven.

For baking, there are a huge number of dough recipes. Consider the simplest and most delicious of them that a novice housewife can cook.

Yeast Lean Dough

This is the simplest and most versatile recipe for pastry and bun dough. It works for everyone, requires a minimum of costs and experience. The dough according to this recipe turns out to be light, not burdened with baking, so people on a low-calorie diet can afford baking from it. To prepare it:

  1. We take a glass or enamel container and measure out 500 ml of water with a measuring cup, pour it into a container, heat it to a temperature of 35 degrees.
  2. Then pour three tablespoons of sugar, a bag of dry yeast and a quarter teaspoon of salt into heated water, mix.
  3. Now we measure out five heaped tablespoons of flour and pour them into the water with sugar and yeast. Again, mix everything thoroughly until the lumps dissolve. If you have a mixer, then it will do a great job with this problem; cover the mixture with a towel and leave for a while to raise the yeast. This mixture is called dough. In a warm place, she quickly rises with a "hat".

After maturation of the dough:

  1. We measure out 80 ml of any vegetable oil and pour it into a container with the future dough.
  2. Then we begin to gradually sprinkle flour, kneading thoroughly. As a rule, it takes about one kilogram of flour to make the dough.
  3. After the dough stops sticking to your hands, you need to leave it to rise. For about half an hour.

So the dough has risen. Now you can cut it into pies, filling it with bird cherry jam.

It should be baked at a temperature of 150 degrees for 30 minutes. Before baking, the pies can be brushed with milk or egg for a delicious ruddy sheen.

The same dough and filling can be used to make delicious buns.

To do this, you should:

  1. Roll out the dough into a rectangle as thin as possible. If you managed to roll it out to a thickness of one centimeter, then this is quite enough. If the layer is thicker, don't worry. It will still be delicious.
  2. Put the bird cherry filling on the rolled dough in a thin layer.
  3. Roll the filled dough into a roll.
  4. Cut the roll into pieces, three centimeters thick.
  5. Roll in flour.
  6. Place on a baking sheet lined with baking paper.
  7. Bake for 30 minutes at 190 degrees.

Bird cherry flour is, unfortunately, not a very well-known product for our area. But it has a lot of advantages - from a wonderful taste and rich healthy composition to dietary properties. Many bakery products are made from bird cherry flour, the delicious taste of which, coupled with a valuable composition that carries many benefits, deserves the attention of the masses.

Peculiarities

It would seem that in our time you will not surprise anyone with a new variety of flour - almond and coconut flour, various nut and pea flours, pumpkin flour are widespread. However, the bird cherry product on this list is worth it separately. In Russia, this type of flour is not very common - few people know about its existence, despite the huge number of useful properties and advantages. Therefore, it can be very difficult to find it in mass production, it is made to order by small specialized enterprises.

Bird cherry flour is obtained not from bird cherry seeds, but from its dried fruits. Bird cherry is dried in specially created artificial conditions or under the rays of the sun. It is noteworthy that for many years the bird cherry was considered an unsuitable product for cooking due to its rather bright and piquant composition. In those days, many peoples, including the Slavic, gathered bird cherry berries and added them to pies, decorated dishes with them, cooked compotes, but this plant began to be used as flour quite recently.

Description and characteristics

Culinary products made from this type of flour are ideally suited for the epithets "unusual", "tasty", "piquant". In addition to various kinds of bakery products, jelly is prepared from bird cherry flour, I add it to alcoholic beverages, including wines - as a natural dye. Bird cherry desserts are especially delicious when mixed with black tea or a cup of hot chocolate.

Outwardly, such flour is very similar to cocoa powder - a pleasant brown color, soft silky texture and fine grinding. Its smell is somewhat reminiscent of the smell of almonds, but it tastes sweet, but with bitterness, in a word, really piquant.

Beneficial features

Bird cherry flour is not only tasty, but also healthy product. Until now, it is believed that it possesses more drugs than wheat. She is credited with bile and diuretic action, antibacterial and anti-inflammatory, is widely used in the prevention of colds, to accelerate regeneration and improve immunity. In a word, her application is enormous.

Bird cherry flour has long been used in folk medicine. For example, it was believed that products made in half from bird cherry and wheat flour helped with diseases such as tuberculosis, diabetes, and various intestinal disorders. Dishes made from bird cherry flour help to stabilize metabolism.

A sufficient amount of antioxidants and flavonoids allows us to conclude that bird cherry flour is a hypoallergenic product.

If you are not directly allergic to bird cherry, of course. It can relieve irritation, itching and inflammation caused by exposure to allergens.

It is also very low in calories. The calorie content of 100 grams is only about 120 kilocalories or 500 kJ, which is several times less than other similar products. 67% of its BJU is occupied by complex carbohydrates, which will make it possible to use baked goods from this flour when losing weight, on diets or during fasting days.

The remaining 16% are proteins, 17% are carbohydrates. It can also be used by people with glucose intolerance or low glucose tolerance. Nutritionists point out that there is more fiber here than in any other flour, which is due to the fact that the bones and skin, which contain large amounts of fiber, are also ground into flour.

One of the most important features of this flour is the absence of heat treatment. It is thanks to this that such substances as vitamins E, P, B1-B2, zinc, copper, iron are preserved in its composition. It is also important to note that the composition of bird cherry flour is very "acidic" - it contains a large amount of organic acids, for example, citric, malic and ascorbic acids.

However, if you suffer from an ulcer or gastritis, then you do not need to be afraid - a large amount of fruit acids helps to remove toxins from the body and normalizes the acidic environment.

In cosmetology, it is especially distinguished that the bird cherry contains a large amount of vitamin P, otherwise - rutin, which slows down the aging process, and in combination with vitamin C and fruit acids can be used as a good renewing agent. Judging by the reviews, resourceful ladies have long known about this and are already using bird cherry flour with might and main as masks and peels, however, mixing it for this with clay, basic fatty oils or other types of flour, for example, pumpkin flour.

All this makes bird cherry flour very useful for whole categories of people (losing weight, eating the right diet, having glucose intolerance), and baked goods made from it taste no less pleasant than from other types of flour.

Contraindications

Despite a number of advantages, useful properties and rich composition, at certain periods of life or with some diseases, bird cherry flour cannot be used.

Due to the content of hydrocyanic acid in the seeds of bird cherry, this flour is not recommended for pregnant women, during breastfeeding and for children under two years of age. The likelihood that hydrocyanic acid will bring any harm to the body is very small, but in case of hypersensitivity, it is better not to use it. The same goes for flour allergies and individual intolerances.

It is recommended to bypass bird cherry flour by the side and if you have diseases such as ulcers, gastritis. It can lead to an exacerbation of the disease, because the composition of bird cherry berries contains an increased concentration of acids, which cannot be used for such diseases.

With chronic constipation, bird cherry flour should also be abandoned - it holds the stool together, which can only aggravate the problem. Also, because of the "acidic" composition, you should pay great attention to the expiration date of flour, if you buy it in a store.

How to cook?

In the vastness of our vast homeland, this flour is not yet so popular, however, gourmets have already appreciated it at its true worth. It is not produced in large quantities, so it will be quite difficult to acquire it - one might even say that it is easier to cook it yourself.

The algorithm for making bird cherry flour at home is simple. The first step is to collect the bird cherry and dry it. In most parts of our country, the best time for this is the period from late July to early September. Next, you should thoroughly grind the berries, for example, using a coffee grinder.

A mortar can also help grind the berries, but this method is very long and requires a lot of effort. When the bird cherry becomes more like finely ground flour, you should push it through a sieve in order to get rid of the remnants of the peel and too large pieces of seeds. You can store such flour for 1 year from the date of manufacture in a closed dry room.

Where is it used?

In many diets, recipes for various pastries made from this flour are often found. These are cookies, pancakes, muffins, breads, buns, it is widely used in the preparation of pies. The assortment is as huge as is the case with regular wheat flour. Here are some simple recipes that everyone can repeat.

Pancakes from bird cherry flour

Such pancakes, like everything made from bird cherry flour, are rightfully considered dietary. To prepare them, you will need bird cherry flour, wheat flour, milk, water, two chicken eggs, sugar, salt and soda to neutralize acids. The sequence of actions is the same as in the case of regular pancakes. Two types of flour are mixed in a separate bowl in a 2: 1 ratio (there is more bird cherry flour). Eggs are beaten separately, one teaspoon of salt and two tablespoons of sugar are added to them.

Next, 100-200 ml of milk is poured into the eggs, everything is altered, then flour is added. Stir the composition until smooth and carefully add the remaining milk or water - we do not pour out all the milk at once, since it is easier to make a thicker mass homogeneous. Add a pinch of baking soda. You can alter the dough either with a mixer or manually.

At the very end, add two tablespoons of vegetable oil to the dough and mix again.

The calorie content of such pancakes will be only about 200 calories, and the taste will be excellent. If desired, such pancakes can be stuffed with a filling, for example, low-fat cottage cheese.

Bird cherry brownies

Brownies, which can be baked from bird cherry flour, are considered no less tasty. You will need 100 grams of bird cherry and wheat flour, sugar and butter, 200 ml of milk, 3 eggs and sugar - to taste. You can use pomegranate or nuts as decoration. You will also need cookie cutters.

Boil the milk and pour over the bird cherry flour, leave it in this position for 2–2.5 hours. Melt butter, mix eggs with sugar - but don't whisk.

Bird cherry flour over time should look like a thick dark paste. Add it to eggs and sugar, and don't forget the butter as well. Stir the resulting composition, add wheat flour. The dough will be liquid, for convenience we advise you to arm yourself with a ladle for filling out forms. Lubricate the molds with vegetable oil. Brownies are placed in an oven preheated to 170 degrees for 15-17 minutes.

Bird cherry bread

If you are a lover of homemade bread, then you will definitely like the bird cherry bread recipe. It is a little more difficult than making ordinary wheat or pumpkin bread, but the taste is amazing. Take 400 ml of water, bird cherry flour 30 g, wheat flour - 600 g, 3 tablespoons of sunflower oil, salt - 1 teaspoon, 1 tablespoon of sugar and 6 g of dry yeast.

First of all, mix wheat flour with yeast in a large bowl, bird cherry flour, as in the case of Brownie, pour boiling water (200 ml), add salt and sugar to it. Wait until the boiling water with flour has cooled down, and then pour the resulting mixture over the wheat flour. Add the remaining 200 ml of warm water, sunflower oil, mix the dough thoroughly, knead. As a result, it will be soft for a long time and stick to your hands a little.

Now take another bowl, brush it with sunflower oil and put the dough in it. Now you need to cover it with a plastic bag and leave for an hour and a half. After forty minutes, the dough will need to be kneaded, covered with foil again and left to rise for the rest of the time. After its expiration, the dough will rise, become more like traditional bread - all that remains is to give it the shape of a loaf.

The form in which the bread will be baked should be lined with parchment or oiled. You should put the bread in a baking dish, cover with a cloth and leave to stand for another half hour. During this time, the dough will increase even more, take up the entire form, and then it can be baked.

The oven should be preheated to 200 degrees for the first 10 minutes. You need to bake the dish with steam, substituting a bowl of water under the mold. Next, you should reduce the heat so that the temperature drops to 185, leave the steam, bake for 40 minutes.

Depending on your oven, the baking time may be slightly longer or slightly less; on average, bird cherry bread is baked for about an hour.
